Terri's Pot Roast (Best one - hands down)

Seriously...so easy and so incredibly delicious!  My mom makes a killer pot roast!!

What you need:
Oven bags (usually on the baking aisle or by the plastic wrap)
1.5 lb roast (ideal is only 2-3 inches thick...any thicker and it'll be dry and take FOREVER to cook)
russet potatoes (if large, cut in half or thirds, if medium, just poke a few holes in them so they don't explode)
carrots
celery
onion - chopped
dried onions
1-2 cans cream of [something] soup (mushroom, chicken, celery, whatever)
1 pack brown gravy mix - the powder stuff
1 1/2 cups water
Seasonings (salt, pepper, thyme, whatever other flavors you like)

Sear the roast until browned with salt and pepper.

Place in oven bag (in a large roasting pan)
Place potatoes around the roast.
Add fresh veggies and place on top of the roast.
Mix together remaining ingredients and pour over the roast and veggies.
Cut 3 small holes in the bag so it doesn't explode.

Bake at 325 for 3.5 hours.  Remove carefully from bag (don't get burned by the steam), mix it around a little to make sure the gravy coats everything and serve.

Easy, easy!

White Chicken Enchiladas

Another Facebook Recipe

10 soft taco shells
2 cups cooked, shredded chicken
2 cups shredded Monterey Jack cheese ( I like the Kraft Tex Mex)
3 Tbsp. butter
3 Tbsp. flour
2 cups chicken broth
1 cup sour cream ( I use Greek yogurt)
1 (4 oz) can diced green chillies (these are not hot)
1. Preheat oven to 350 degrees. Grease a 9x13 pan
2. Mix chicken and 1 cup cheese. Roll up in tortillas and place in pan.
3. In a sauce pan, melt butter, stir in flour and cook 1 minute. Add broth and whisk until smooth. Heat over medium heat until thick and bubbly.
4. Stir in sour cream and chilies. Do not bring to boil, you don't want curdled sour cream.
5. Pour over enchiladas and top with remaining cheese.
6. Bake 22 min and then under high broil for 3 min to brown the cheese.

Homemade Hamburger Helper- Cheeseburger Macaroni

  • ½ cup onions, diced
  • 1 tablespoon butter, optional
  • 2 cups milk
  • 1 cup cold water
  • 2 cups elbow macaroni, uncooked
  • ½ teaspoon sugar
  • 1 teaspoon salt or seasoning salt
  • ¼ teaspoon black pepper
  • ¾ teaspoon oregano
  • ¾ teaspoon parsley
  • ¾ garlic powder
  • ½ teaspoon chili powder
  • 1 teaspoon paprika
  • 2 cups cheddar cheese, shredded

Instructions
  1. Brown ground meat in a skillet over medium heat until almost done.
  2. Add in onions and cook until tender.
  3. Drain meat & onions on paper towels and return to skillet.
  4. Add remaining ingredients except for the cheese.
  5. Stir to combine.
  6. Bring to a boil.
  7. Reduce heat, cover and cook until pasta is tender, about 10 minutes. Stirring occasionally.
  8. * Do not over cook pasta. I usually taste check it at 9 minutes.
  9. Remove from heat and stir in cheese. Sauce may be thin.
  10. Let pasta sit to thicken the sauce, meanwhile adjust seasonings if needed.
  11. Serve and enjoy.

Notes
~TIPS~ Use various cheeses if desired. Add taco seasonings for a chili-mac. Chopped tomatoes are good in this as well. Want veggies? Peas or broccoli works great ! Hot sauce anyone?

Kelli's Infamous Coconut Chicken

I've been cooking dinner for TJ's family for the past few months. They eat a lot of chicken, and have been getting tired of the recipes they have. So, I've been messing around coming up with new things for them to try. This is TJ's family's favorite chicken recipe right now (well, one of them). It's really simple.

Ingredients:

6 small chicken breasts
1/2 cup sweet and condensed milk
1 cup dried coconut
2 tbsp oat flour (can use other types of flour, but I like oat flour the best) - grind up oats in blender - and boom, you've got oat flour!
1 tsp salt
2-3 tsp pepper
1 tbsp olive oil

Directions:

1) Trim chicken breats - we try to make this as fat free as possible.

2) Preheat oven to 350 degrees, and heat large skillet over medium heat (with olive oil).

3) Mix together coconut, flour, salt and pepper onto a plate.

4) Lightly coat chicken breasts in sweet and condensed milk, then dredge in coconut mixture.

5) Place coconut coated chicken in skillet. Cook until the coconut is golden brown (c0conut may stick to pan).

6) Remove from skillet, place in oven safe glass baking pan (remove any left over coconut and add back to chicken), and cook for 20-30 minutes, until juices run clear.

See! Easy recipe, but really good! Also, if you like pepper, the pepper gives a really good flavor along with the sweet coconut, so if you're brave, add a little more.
