Terri's Pot Roast (Best one - hands down)

Seriously...so easy and so incredibly delicious!  My mom makes a killer pot roast!!

What you need:
Oven bags (usually on the baking aisle or by the plastic wrap)
1.5 lb roast (ideal is only 2-3 inches thick...any thicker and it'll be dry and take FOREVER to cook)
russet potatoes (if large, cut in half or thirds, if medium, just poke a few holes in them so they don't explode)
carrots
celery
onion - chopped
dried onions
1-2 cans cream of [something] soup (mushroom, chicken, celery, whatever)
1 pack brown gravy mix - the powder stuff
1 1/2 cups water
Seasonings (salt, pepper, thyme, whatever other flavors you like)

Sear the roast until browned with salt and pepper.

Place in oven bag (in a large roasting pan)
Place potatoes around the roast.
Add fresh veggies and place on top of the roast.
Mix together remaining ingredients and pour over the roast and veggies.
Cut 3 small holes in the bag so it doesn't explode.

Bake at 325 for 3.5 hours.  Remove carefully from bag (don't get burned by the steam), mix it around a little to make sure the gravy coats everything and serve.

Easy, easy!

Homemade Hamburger Helper- Cheeseburger Macaroni

Ingredients
  • 1 lb ground beef or ground turkey (sometimes I use only ½ lb)
  • ½ cup onions, diced
  • 1 tablespoon butter, optional
  • 2 cups milk
  • 1 cup cold water
  • 2 cups elbow macaroni, uncooked
  • ½ teaspoon sugar
  • 1 teaspoon salt or seasoning salt
  • ¼ teaspoon black pepper
  • ¾ teaspoon oregano
  • ¾ teaspoon parsley
  • ¾ garlic powder
  • ½ teaspoon chili powder
  • 1 teaspoon paprika
  • 2 cups cheddar cheese, shredded

Instructions
  1. Brown ground meat in a skillet over medium heat until almost done.
  2. Add in onions and cook until tender.
  3. Drain meat & onions on paper towels and return to skillet.
  4. Add remaining ingredients except for the cheese.
  5. Stir to combine.
  6. Bring to a boil.
  7. Reduce heat, cover and cook until pasta is tender, about 10 minutes. Stirring occasionally.
  8. * Do not over cook pasta. I usually taste check it at 9 minutes.
  9. Remove from heat and stir in cheese. Sauce may be thin.
  10. Let pasta sit to thicken the sauce, meanwhile adjust seasonings if needed.
  11. Serve and enjoy.

Notes
~TIPS~ Use various cheeses if desired. Add taco seasonings for a chili-mac. Chopped tomatoes are good in this as well. Want veggies? Peas or broccoli works great ! Hot sauce anyone?

As most of you know, I love to barbeque! Shish kabobs are my favorite! I've got a million shish kabob recipes that I've come up with! Mmmmm!!

Ingredients:

1 1/2 lbs beef strips
1 onion, peeled and cut into 1-inch squares
1 green bell pepper, seeded and cut into 1-inch pieces
8 ounces pineapple chunks (Fresh pineapple is best when in season) coated with brown sugar
18 cherry tomatoes
1/3 cup honey
2 tbsp firmly packed brown sugar
1 tbsp garlic powder
1 tsp worcestershire sauce
TT black pepper

Directions:

1) Preheat grill
2) Thread beef, onion, bell pepper, pineapple, and tomatoes alternately on skewers
3) In a small bowl combine servered pinapple juice, honey, brown sugar, garlic poweder, worcestershire sauce and pepper. Stir until sugar is dissolved, set aside.
4) Gill kabobs for 18-22 minutes (for well done), 14-18 minutes (for medium) or, 10-14 minutes (for rare), turning often, while brushing on marinade every 3-4 minutes.
